Spaghetti squash is! Lately we’ve been obsessed with this veggies and here’s why .. it contains vitamins A, B and C, potassium, omega-3 fats, which reduce inflammation and omega-6 fats, which are linked to proper brain function AND it satisfies our craving for pasta or noodles without all the calories attached (WAHOO!) Spaghetti squash, also know as noodle or vegetable squash, you can cook it multiple ways and add whatever ingredients you like! Check out two ideas below and let us know when you give them a try 🙂
1) Stuffed Spaghetti Squash
–Preheat the over to 350 degrees, and cut your spaghetti squash in half.
–When the over is ready place the spaghetti squash face down on a coated Pyrex baking pan and bakes for 35-40 minutes. You can also heat up the spaghetti squash in the microwave on a plate with a little bit of water for 8 minutes each half.
–While the squash is being cooked, choose what you want to add into it. Below we added shrimp, spinach, onions, mushrooms, and peppers.
–In a large skillet start to mix and cook all of your ingredients up on medium heat. Add in pepper, garlic, red pepper flakes and other spices you prefer.
–When the spaghetti squash is ready, let it cool for about face minutes.
–Turn the squash face up and add your ingredients to the top!
–You can choose to top it with cheese, hot sauce, more spices. Then take a forkful and dig in! It’s THAT easy!
2) Spaghetti Squash “Spaghetti”
–If you don’t feel like forking through your half spaghetti squash you can repeat the steps above and pause at the last two.
–After your spaghetti squash has cooled, flipped it over and start to dig a fork from the top to bottom, so the squash become spaghetti like.
–As you peel and create “spaghetti” place it on a plate
–When you have the amount you want, add the ingredients from the skillet, more spices, and whatever sauce you want!
–In this one we added mushrooms, asparagus, and spinach 🙂
